Generally our largest cost savings egg replacer/extender, Thel performs well in lean formulations that call for a low percentage of whole dried or whole liquid eggs. Thel work well in cakes, buns doughnuts, pies and sweet goods depending on the recipe. Thel is to be used on a pound for pound basis vs whole dried eggs or 1 part Thel + 3 parts water = 4 parts whole liquid eggs. Chickadee Thel Egg has a 12 month shelf life from the date of production if stored properly.
